Salmon & Green Peas Quiche
Ingredients list for 6-8 persons (24 cm tart tray)
- 350-400 grams fresh or frozen salmon filet
- 1 yellow onion
- 1/2 garlic head
- 2 cups frozen peas
- 200ml cooking cream
- 4 eggs
- 1 cup shredded parmesan
- 1/4 cup fresh parsley
- 1/4 cup fresh mint
- 250gr flour
- 125gr salted butter
- 2-3 tablespoons milk
- Garlic powder
- Oregano flakes
- Salt, pepper, olive oil
Cooking instructions:
- Steam the salmon fillet until fully cooked and remove the skin if any
- Pre heat your oven 170 Celsius.
- Make the crust: let the butter rest one hour before baking at room temperature. Pour the flour into a large mixing bowl and mix it with one teaspoon garlic powder, 1/2 teaspoon salt, and a bit of pepper. Then cut the butter into small cubes, and add it with your hands to the flour. Once you reach a wet sand texture, add progressively the milk (2 tablespoons might be enough) and make a dough ball.
- Flatten the doughball in between two sheets of baking paper with a rolling pin. It should be 0,4-0,5 cm thick. Lay into the tart pan (with one layer of baking paper under), equalize the edges, and make holes with a fork on all the bottom surface of the crust.
- Bake it for 15 minutes at 170 Celsius.
- Peel and mince onion and garlic very thin. Boil some water and blanch the frozen peas for 7 minutes. In the meantime, start gently frying onion and garlic with olive oil until translucent. Drain the water from the peas and fry them gently with the minced garlic and onion for an extra 8-10minutes. Peas should be tender. Season with salt and pepper.
- Whisk together the eggs and the cooking cream. Add half of the shredded cheese. Season with salt, pepper and a teaspoon oregano.
- Wash and mince the parsley and mint leaves thinly. Add them to the eggs and cream batter.
- Add the fried peas to the eggs and cream batter. Crumble the steamed salmon fillet on top of that mix.
- Then pour that batter onto the pre-baked crust.
- Sprinkle with the remaining cheese. Bake for 40-45 minutes, 175 Celsius. Top should be golden.
